The mmm-mazing cucumber!

Cucumbers are one of my favorite veggies, and also one of the most under-appreciated veggies out there.  They’re cheap, they’re nutritious, and they’re versatile. Whats not to love?  In most stores, a cucumber costs around 89 cents.  You can eat cucumbers to your hearts desire and not break the bank!  Of course, it goes without saying that organic is better than non organic, so if you can afford it, go for organic cucumbers.  If not, no problem, they are still incredibly good for you!

Nutritional perks of the cucumber:
One serving of this wonder veggie (1/2 cup) is only 8 calories…so go ahead a eat up!!!
Cucumber is a good source of fiber (no more icky fiber drinks or chews!)
Hydration – cuces are naturally hydrating, and this allows the fiber to be absorbed better! Power combo!
Vitamins & minerals – cuces are full of these, notably vitamin A, vitamin C, potassium, and calcium.

I’m a fan of easy cooking, especially when i’m packing my lunch early in the morning before work!  Below are my favorite cucumber salad recipes. They are DELICIOUS (of course), fast, and easy!  Note: always leave the skin on…thats where most of the nutrition is!

Hungarian Cucumber Salad
1 cucumber, very very very  thinly sliced (with skin on!)
1TB vinegar
1TB olive oil
1/2 TB paprika
1 tsp sugar
1 tsp salt
Freshly ground pepper, to taste
Cucumber Dill Salad
1 cucumber, sliced or chopped
2 TB vinegar
1/2 TB olive oil
1 TB dill (if you have fresh dill, even better!)
1/2 tsp salt
Green Goddess Salad
1/2 cucumber, chopped
1/2 avocado, chopped
1/2 TB lemon juice
1/2 TB vinegar
1/2 TB olive oil
1/2 tsp salt
Fresh ground pepper to taste
